
Chew a piece of mint gum and your mouth soon feels cool even though the gum is at room temperature. Mint is not removing a large amount of heat as ice would. Instead, menthol activates the TRPM8 ion channel on sensory nerves. The same channel also responds to moderately cool temperatures, so the nervous system receives a signal resembling ‘this area has become cooler’.
Temperature and the sensation of temperature are therefore not identical. Temperature is a physical quantity measured with a thermometer; coolness is a perception produced by receptors, nerves and the brain. Menthol changes the receptor’s response, so the sensation is real even when the mouth’s temperature barely changes. Capsaicin provides a useful contrast: it activates the heat- and pain-related TRPV1 channel and can produce burning when food is not physically hot.
Cold water often feels even colder after mint because actual cooling and menthol are both driving the cold-sensing pathway. Warm water does not simply prove that the mint has ‘stopped working’; the two inputs can still combine within the same sensory system. The example shows that sensation is not a copy of a thermometer reading. It is the body’s interpretation of the environment through particular receptors.
