Why Does a Dried Coffee Drop Leave a Dark Ring?

When a drop of coffee dries on a table, it often leaves a dark ring around its former edge. It is tempting to imagine the coffee particles simply settling evenly as the water disappears, but the classic “coffee-ring effect” shows that the liquid is moving internally while it evaporates.

One important condition is that the contact line at the edge of the drop becomes pinned by small irregularities on the surface, so it cannot simply retreat inwards as the volume falls. Evaporation is also typically strongest near the edge. Liquid lost there must be replenished, producing an outward flow from the interior. Suspended coffee particles are carried with that flow and accumulate near the perimeter. Once the water is gone, the edge therefore contains more deposited material and appears darker.

The pattern is not inevitable for every drying droplet. Whether the contact line is pinned, the shapes of suspended particles, surface-tension-driven flows and the properties of the liquid and substrate can all alter the final deposit. A landmark 1997 Nature paper identified outward capillary flow as the central mechanism. A coffee stain is therefore not merely what remains after water vanishes in place; it is a record of evaporation, flow and particle transport.
